Note: this is my last video from my old house with my beautiful kitchen, that I miss terribly. This video was shot in July 2020, but trapped in my desktop editing computer until I got settled in my new place (with a mediocre, at best, kitchen). I hope to start making new videos in January 2021…

In this video, I make manicotti marinara with mint using homemade crepes, which was interesting. The recipe is from the cookbook titled, “The Mafia Cookbook” by Joseph “Joe Dogs” Iannuzzi. The hardest part of this is making the crepes as it’s a bit tricky to do, but once I got the batter right (added a little extra water) & the pan the right temp (the burner on the lowest setting), it worked much better. In this video, I make Spaghetti with Carbonara Sauce using a recipe from the cookbook titled, “Great Pasta Sauces” by Sally Griffiths. This recipe is basically just egg yolks, cheese, & a little milk mixed with pancetta or smoked bacon (I used smoked bacon) over hot pasta & it’s surprisingly good & easy to make. In this video, I make Rigatoni Dragged with Florentine Meat Ragu using a recipe from a cookbook titled, “Biba’s Italy” by Biba Caggiano. It was pretty easy & very good. I only used 2 chicken livers, but it was still REALLY rich. With the leftovers, I added a can of tomato sauce just to make it less heavy/rich & liked it a little better.
